I made this gorgeous breakfast this morning. The sunshine put me in a great mood, so I decided to go all out. French toast is such an easy thing to make, and tastes delicious with so many toppings. I have been watching
The Food Channel all week while visiting my boyfriend, because he was in college, and I saw Nigella Lawson make french toast with poached plums, So I made french toast with poached plums! (Mean Girls pun alert!) Here's what you'll need, and a few simple steps to get you started >>>
1. Beat an egg and a splash of milk together, and pour onto a slice of bread (any bread of your choice). All I had was white pan, but my favourite would be a crusty loaf. Repeat for each slice of french toast.
2. Heat a pan, add a bit of butter for frying (instead of oil - it's tastier). Fry the bread on a medium heat until well browned, and flip. Remove once its lightly crisped up.
3. While doing this, you should have your plums (cut into 4 -6 pieces) poaching in a bit of cranberry juice.
4. When it's all cooked to your liking, serve up. Add the cinnamon to the bread at this point (it has a tendancy to burn on the pan). I also added some maple syrup to sweeten. Annnnd Enjoy!!
This is quite a good start to the day, as your eating 2 eggs (if you have 2 slices) so you've got your protein, and your energizing carbs. If you'd like a healthier option, try using gluten free, spelt or rye bread. And add honey instead of maple syrup to sweeten.
