Homemade Chocolate Truffles

I thought for Mother's day I would try to create a nice thoughtful gift for my mam, so I decided to try my hand at making some delicious chocolate truffles. I had watched a baking show
and these didn't look too difficult so I thought I'd give it a bash. And don't mammys always love a handmade gift :P

You will need:
1/2 cup of cream
250g chopped chocolate (use any kind you like, cooking chocolate or even some dairy milk)
1 tsp Vanilla Essence

To coat:
Cocoa powder
Ground Almonds
(or whatever coating you would like)

Method:
Heat the cream in a saucepan.
Chop up the chocolate into small chunks.
Once the cream is hot enough, pour over the chocolate in a seperate bowl.
Leave to stand for a minute, and then stir until all the chocolate is melted.
Add the vanilla essence. Leave this mixture to cool and set in the fridge for 2 hours.

When the mixture is set, scoop out small amounts of the mixture, and quickly roll in in your hands to create nice round shapes. When you have all of them done, roll each truffle in whatever coating you decide. I used cocoa powder for most of mine, and some ground almond for a few. Keep them in the fridge until you're ready to eat.

Hope you enjoy baking some truffles of your own. You can also add different kinds of flavourings to them if you like, so make sure to look up some recipes for that :)

Happy Mother's Day to all the mothers out there, especially mine :)
