Banana Pancakes


I made myself this scrumptious breakfast yesterday morning and I just had to share the recipe with you all. In a bid to be healthy, I've been eating porridge almost every morning, but at weekends it's nice to treat yourself, so
I whipped up some banana pancakes. They are gluten free, dairy free, sugar free and one of your 5 a day. Nothing this healthy should taste this good, but it does!

Here's what you'll need:
1 medium banana (mashed or blended)
2 eggs
1/2 cup of ground almonds
vanilla essence (or almond essence to make them really almond-y)

The process is really simple. If you're feeling a bit lazy you can just mash the bananas and whisk together with the eggs, then add the almonds and vanilla essence. Or you can put all the ingredients into a blender for a smoother batter. Both methods work just fine. Then fry the pancakes up as you normally would. Take care when flipping the pancakes because this formula can be a bit more brittle than regular pancakes. I had my pancakes with some natural yogurt and fruit, but again, serve them with whatever you fancy!
