This is a recipe I first heard of from Tar Mar (check out her blog here - lots of amazing fashion and recipes). I am sweet potato obsessed so I had to try this. I'm a huge pizza fan, but generally just because of the toppings. And once you've got your favourite toppings,
the base doesn't really matter. Luckily, this base is still scrumptious.
What you'll need:
3/4 large sweet potatoes
Flour ( I used gluten free)
Red Pesto
Pizza Sauce
Toppings: Pineapple, cheese, chorizo, mushrooms, peppers etc
Method:
Cook the sweet potatoes in the microwave for about 6-8 minutes - or until soft enough. Peel them and then mash them all together.
Add in a cup of flour and mix thoroughly. You can season this mix if you like with salt, pepper or any other herbs you like. I think I used parsley.
Roll out the mixture into a thin base and bake for 5-10 minutes before adding the toppings.
Add the pesto, then the pasata sauce, cheese, and then all the rest of your toppings.
Bake this again for 10-15 minutes, or until it's just how you like it.
It's really fun to add all the toppings you want as well. So have fun with it and then enjoy!x
